Eggs or what?
Shavuot came and went! Somehow, this year, it did not make an impression on anybody. Most people just wanted to know if we all ate cheese cake and it so happens we had a great one! The L&M has an orthodox friend who sends him marvellous gifts for all holidays; this time, a huge arrangement of flowers arrived and under the bottom leaves was this great cheese cake! If I did not know better, I would say that it is Debbie's Cheese Cake (column No: 28)!... But that is quite impossible...

Here, in the Home, they had two afternoons which we were determined to attend, but somehow managed to miss. We were quite ready to attend the second one, and even got dressed for the occasion, but somehow, before we knew it, we were sitting down and fighting our daily battle in Scrabble and devouring pistachios! And yes, I buy them every day and no, we cannot play Scrabble without those little nuts. Impossible! I buy tons of them and all the weight we put on is from them! Even though we are always told that nuts are very healthy and one should include them in ones daily diet, this is definitely going much too far! But again, it keeps us going and it keeps us playing and hopefully gives our brains a good work out!... At this stage in our lives, we feel that the more we are doing for "body and soul" the better our time will be! So we will continue messing around with those nuts, because no matter how we try not to make a mess, we do! I have to sweep the room after every battle!

We have not written much about eggs lately... Did you see the latest study? I saw it on television this week! A 10-year study was made in Mexico on eggs and the result of it was that one should eat an egg a day! I kid you not! It was right there on TV, showing people eating soft-boiled eggs! Dipping toasty-soldiers into it!... It the study they found out that an egg a day will keep your heart healthy and your blood pressure low and the TV program was quite firm about trying to convince people to start eating eggs again!...Would you believe it? Remember the outcry years ago to stop eating eggs? Cholesterol! It will kill you!...

All those "break-through-news" which we keep getting... It always brings me back to my wonderful doctor, who unfortunately died years ago. Whenever I came to him with a new diet or something new about a certain food, he would always say (and honestly, I hear his voice): "Eat everything Debbie, but in moderation"! And yes, I have followed his good advise, because every year somebody, somewhere, will come out with a new "study" and try to drive us crazy! I am convinced that it is all for publicity for something or other, but no way will they succeed with me! I love eggs and never gave them up; is there anything more beautiful then a fried egg? That yellow over the white... You do not find such a yellow anywhere else! Fried eggs served over spinach? Anything green? Or poached eggs over everything!...

Fine. I will stop... Just one more thing I want to share with you: I had a pan which was coated with a sauce of all sorts of things... Remember we made that chicken breast steamed on mushrooms? I made hamburgers this time and the pan looked too good to just wash it out! I put in a couple of chicken-stock cubes, salt pepper, scraped the bottom well, added some gin, mixed it well and simmered it for a few minutes; a marvellous bit of sauce was created for any left-over thing! I put it away in the freezer and next time I go shopping I will buy spinach or kale, steam them in that sauce and poach eggs on top of that! Am already looking forward to that!

I spoke to someone the other day and she was complaining about the lack of energy she experiences now. Of course we both blamed it on bloody-old-age and of course, we both believe that its true! But then I remembered those "Protein balls" some kind reader send me and you know (or should know) that protein boost your energy! She tried them and claims that they work and she is feeling much more energy rushing through her. Right! Sounds great to me, so lets all try it and get that boost of energy!

INGREDIENTS
* 1/2 cup moist pitted dates
* 1/2 teaspoon ground cardamom
* 2 ounces espresso
* 1/2 cup organic coconut flour
* 1/2 cup walnuts or almonds
* 1 teaspoon vanilla
* 1 tablespoon honey or maple syrup
* 1 tablespoon raw cacao powder

Coating
* 1/4 cup coconut flour
* 1/4 teaspoon cardamom

DIRECTIONS
Place first 8 ingredients in a food processor. Blend until completely pulverized, scraping down the sides as needed. Use a cookie scoop or large spoon to measure and roll into evenly sized balls. Refrigerate 30 minutes to harden. Combine remaining coconut flour and cardamom in a small bowl. Roll balls in them, and then serve. Store in an airtight container for 24 hours, or freeze for later use. With all that new energy, I hope you will have a great week!
