
I promised to tell you what to put into your freezer actually, what to keep there at all times and how to use it. It will make your cooking-life very easy, and you will be able to invite 6 or 8 people to dinner and not be 'fritzed' out about it! You will do it with utter ease and great flair and pleasure, because what is more satisfying then feeding people you love?
That big bottle of vodka we mentioned a while back is really a must in your freezer; it's the only way to serve vodka. So, don't fight it; just get a larger fridge!
When you cook or roast, never throw away any left over 'bits'; get some small plastic containers with covers and labels. Lots of labels! You really need those, because "No! We do not remember what we did last week!"... You need that label right there to tell you what is inside that container! If you have some sauce left over, save it in a container, label it and freeze it! When you roast a chicken, always roast two: one for the table and one for the freezer! You will always have a ready- made dinner waiting there for you when you really have no time to cook! The same goes for meat loaf; ALWAYS make two; one for the table and one for the freezer! I will tell you what to do with the one in the freezer; the important thing is that it is there! And YOU know it! Security, kitchen style!
The 'bits' from roasting that chicken - save them; pour some boiling water into the pan, even if you lined it with foil or used a disposable one. Scrape all that "goog" left there after roasting and add this to your container, label it and freeze. The same goes with roasting meat; all those 'bits' will be wonderful to add to soups, to steam veggies in and to add to other sauces. Have faith! It works for me! It will work for you!
The very important things, which save a lot of bother, are the basics you will have in your freezer. Like a roll of mixed cheeses as well as small bread rolls which the cheese gets stuffed into and then baked. Oh boy! They are seriously delicious and you will serve them with drinks, or for lunch when you are caught out and in a pinch and have to make lunch for four people. All this sits right there in your freezer.
Yes I will tell you how it¼s done and why years ago I have eliminated the first course at my dinner parties; your guests arrive and they are hungry! They want a couple of drinks...They have had a rough day! They know that you will serve them a great meal and they want to enjoy it, but they instead of a first course, I serve a large fancy salad. We will go into that as well. Yes; as soon as we can and you want me to...I need to hear from you as maybe nobody is interested, so why knock myself out...
The next basic "stuff" in your freezer is lentils, rice and wheat; no kidding! It is basic stuff - believe me! Everybody can cook a potato but lentils, rice and wheat are different.
Buy 1/2-kilo of all three - lentils, rice and wheat. Boil them in water. SEPARATELY! Of course separately!!!! Come on, we are intelligent people here, no? Do you really have a pot big enough to boil all these at once???
Make sure you have plastic bags on hand; pinch them from the supermarket if you have to!
When everything is cool, (you can do it one at a time; no problem there!) if you have too much water left over from the boiling, dump the stuff into a sieve and get rid of the water. Divide the lentils/rice/wheat into four portions and place in the plastic bags and flatten them out. Make them about 1/2 an inch thick; seal and mark. You will now have 12 very flat packages, which you will stack in the corner of the freezer. You now have 'something' to serve with your main course at all times and also can make lunch if necessary.
Mix lentils and wheat or lentils with rice, add all sorts of spices (Hey! It is up to you here) then poach eggs on the top. Green salad? Fruit? Coffee? What is wrong with that for a good lunch?
We will also have a part of the desert in your freezer in the form of a chocolate log and ice cream and we will make all sorts of deserts out of those, if you have no time to make something very special.
